A chthonian symbol, celery was said to have sprouted from the blood of Kadmilos, father of the Cabers, chthonian divinities celebrated in Samothrace, Lemnos and Thebes. The spicy odour and dark leaf colour encouraged this association with the cult of death. In classical Greece celery leaves were used as garlands for the dead, and the wreaths of the winners at the Isthmian Games were first made of celery before being replaced by crowns made of pine. According to Pliny the Elder (Natural History XIX.46), in Archaia the garland worn by the winners of the sacred contest at Nemea was also made of celery.

Yeah, I can imagine: mustering up all that energy to overcome your disgust + shutting down all of your senses (olfactory and others the name of which I can't think of right now...) it's the kind of effort that makes me sweat...

I like celery because it looks cool growing, and without it a Mire poix would be little more than chopped onion and carrots ; )

Celery has admirable vodka resistance abilities. Not that vodka resistance is always what you want; consider the olive. But when you want a lack of porosity, celery is there for you, standing tall (until you chop it coarsely).
I have mixed feelings about celery in bird dressing. It adds something, to be sure, but given the opportunity and the inclination, wouldn't you rather add something else?
Celery salt is important. Not very often, but when you need it by gum you need it. Whenever I see it in the cupboard I always think of fodder.

as long as celery is minced very finely or the little strings are pulled out of it, I don't mind it.
It's the HUGE FREAKING CHUNKS of it put in by lazy cooks woud couldn't be arsed to chop it small that annoy me.
I also like it in soups, cooked recipes etc, but again only if its not COARSELY CHOPPED

celery, raw, develops the jaw
but celery, stewed, is more quietly chewed.

Amen.
Funky, do you also feel that the raw tomato is an instrument of the devil unless deseeded and finely chopped or very thinly sliced?
Perhaps we were separated at birth.

I'm not so picky about tomatoes. The only annoying kind of tomatoes for me are mealy ones that are being presented raw after having been stored in the fridge.
Seeds, juice, sliced, all good.
Improperly stored, not.
