sunday's dinner: cookies at 5 pm and a lot of texas barbecue pringles at 11 pm

monday's dinner: a quarterpounder and a mc chicken

last night's dinner: chicken schnitzel with pepper sauce, tossed salad and french fries. yum! finally some real food! wooo hooo!

Big piece of delicious, home made tiramisu....

This might be off the subject, but if you had like, 8 plates, and like, 4 people in your family, you'd only use the first 4 plates, over and over. So, would you have to eventually rotate those plates? Like a matress, so you don't wear it out.

yep. The delicious garlic souce that's like greek tzatziki but with different kind of joghurt (less thick).
Sometmes I do this souce at home, so everybody smells with garlic and so nobody minds.

be careful, if you use too much paprika powder it´ll make your tongue numb! :D

edited to add: a little bit of tabasco or worcester sauce tastes great too!

the Bink picked out the swordfish, and ate some, but settled on a kids cuisine mac&cheese. Forgot to eat the chocolate pumpkin that came with...I'd eat it but he'll remember he forgot probably tomarrow at noon and insist on calling me from school. I cant get away with much.

He loves fish so much, if he catches one, he'd prefer I brought rice and soy sauce to eat it right there raw. Played with the damn swordfish all the way home, and it was all i could do from drivin off the road keeping his hands out of the bag.

Bink picked out sashimi tuna and salmon the last time we went to the fish store, and made me make sushi. He ate most of the fish before I could cook the rice. Go figure. I cant get a vegetable or potato in him. Maybe a raw carrot if there's ranch dip. Maybe takes a bite of steak and always has nuggets at McDonalds, given the choice, refuses meat as an entree. How can you be vegan without the veggies! Likes cheese, but he's a purist on the fish. Made me dissect one he caught, then insisted i cook it. liked garlic on it. If i'd seen a dissection, i doubt i'd be eating the experiment. tuff kid.

My sister was the same way about veggies... to get her to eat any thing plant-based other than, like, bananas was a miracle... then she went to college for pre-med (she's got her MD now and is doing her residency in Colorado - hardworkin' smart lady) and started lecturing my parents about having a salad every day...:D

I am *so* proud of my celebration dinner (have a little one or two-week gig starting next week... means I can probably pay my car registration expenses :D) that I have to post it...

Pizza: Trader Joe's premade pizza dough, slathered with Mascarpone cheese and then topped with alternating layers of goats-milk Gouda, snipped fresh chives, and fresh salmon... threw on some fresh tomatoes after about 10 minutes...

Having it with ice-cold Pinot Grigio. *sigh*....

Last night I had steamed shrimps w/oriental veggie mix, bamboo shoots, sliced water chestnuts, mushrooms & pepper mix (red, green & yellow). And a big glass of milk. No rice b/c I didn't feel like cooking any.

Tonight is salmon on the grill w/green salads & if I get my way, garlic bread.

I had the tentacles, though. Maybe if you cook a diaphragm, it deforms into a tentacle-like shape after melting. I am not sure.

tonight I am hosting a slumber party for a 4 and not quite 2 year old...my best guesses would be chicken nuggets or "Red Chicken"..which is, in reality, Sweet and Sour Chicken, from our friendly neighborhood Chinese place. Either way, all 3 kids are taken care of (counting hsb. as one ;) )

For me I see a Caesar Salad..mmmmmmmmm :)

Tonight I'm making one of my favorites... chicken in dark beer... pure heaven and *super* easy - just don't forget to turn the heat down after 20 minutes or you'll have a bitter sticky mess.

Cuisses de Poulet à la Bière Ackerland

4 chicken legs with thighs
3-1/2 oz. bacon
4 garlic cloves, peeled
2 bay leaves
2 juniper berries, crushed under a heavy knife blade
8 oz. Ackerland beer (or another dark beer)
salt and freshly ground pepper

(Just wanted to add - if you want to use, like, healthy ham instead of the bacon, no problem - and don't worry so much about juniper berries ;) I was just lucky to find and buy them years ago - they keep forever in the freezer...)

1. Preheat oven to 475°F.

2. Season the chicken legs. Put them in a shallow cast iron casserole with the bacon, bay leaves, garlic cloves, juimper berries and beer.

3. Cook in the oven for 20 minutes, then reduce the oven temperature to 350°F. Turn the chicken over and cook another 20 minutes.

4. Turn again, baste with the juice and cook for a further 20 minutes. At this point the chicken should be dark brown and the garlic very soft.

5. Remove the chicken to a serving platter and keep warm.

6. Smash the garlic into the remaining sauce and mix. If there is liquid remaining, put the casserole over high heat and reduce to a rich, carmelized jus. Pour over the chicken.

Serve with noodles and a nice green salad.

Don't worry... there are plenty of "pasta with butter" nights around the Funky Household. Often it's "I can't eat a big meal so I'm just going to have a bowl of cereal. You fend for yourself and make Little Funky some noodles".

They just don't usually make the "What's for Dinner" thread. I'll try to give equal time to the worse-than-normal dinners.

I'm thankful, though, that there is any dinner at all.
