I made country style ribs this past weekend and have been eating that all this week. I'm really tired of ribs. (Never thought you'd hear a Southerner say that, did you?)
I'm going by Popeye's and get a five piece dinner with an extra order of red beans and rice.
That'll keep the ole cholesterol at a good level, won't it?

I am on a cooking jag tonight.

I have made tuna noodle casserole (elbow noodles, half-fat mayo, chopped water chestnuts, onion, thawed baby peas, 2 cans of tuna and Old Bay seasoning) and mostaccioli. Enough for the next week of both. I may be poor, but I won't starve.


Dinner was: Veggie Slices quesadillas, a package of pastrami, and a girthy pickle. ;)

Edited to say:

Modified Zen's Seafood Alfredo

2 servings cooked hot angel hair
1 can minced clams + juices
1 can tiny shrimp, rinsed & drained
1 small package salmon, the kind you dont have to drain
1 can mushroom stems & pieces, rinsed & drained
2 tsp salt free lemon pepper seasoning
2 tsp garlic powder
2 cups light alfredo sauce (bottled)

Mix & eat. Yummmm. Steamed broccoli on the side.

zen's famous garlic salmon fillets

*crushed garlic
*fresh dill
*olive oil (I like the roasted red pepper flavor)
*lemon juice
*butter
*salt
*salmon fillets

put tinfoil down on cookie sheet (makes cleaning easier)

put some olive oil down in the area your fish will be on top of, spread some crushed garlic in the same area. Put salmon on top of that.

smear a little bit of the olive oil over the top and sides of the fish.

spread more crushed garlic over the top of the fish

put fresh dill (or the kind in a jar if thats all you have) over the top of fish

sprinkle a little bit of salt over top of fish

put a few tiny pats of butter over top of fish (not alot, just a few here and there)

sprinkle top of fish with lemon juice

Bake at 350 for about 15 minutes, it will not be done yet. Sprinkle some more lemon juice on top and put it back in until it is done, about another 10-15 minutes. I like to cook it at a lower heat until longer, it keeps it nice and juicy.

Serve hot with Risotto.

Why are you cutting meat out?

I could never cut out fish, I eat it almost every night. And there is no way I could go without seafood.

I hear ya. I didn't eat red meat until I was 13 (for the same reasons, only on my mother's part). I also did not drink regular milk until they came out with hormone free milk. Everything I ate was organic. It was a lot easier when I lived in Colorado. Down here they are not so health conscious.

I believe that it is a healthy lifestyle as long as you keep up with it and eat the right things to make up for things like protein and things that are easy to get from meat.

speaking of cats, my dog almost had one for dinner last night. . . my neighbors cat snuck in hear unanounced while I had the door open yesterday. After having a heart attack because I heard my dog fighting with something upstairs (thinking someone was in my house) I heard a cat hiss. That cat had no idea how close it was to being dinner.

add mexican seasoning per package directions
shred cheddar cheese
add green onions and chopped tomato to ground beef mixture
break up nacho chips

Now I'm going to have some peppermint tea. I totally am not even into tea, or peppermint, but I bought some the other day b/c my tummy was upset and ever since I've really been loving it! Yay for changes!!

If I could eat one kind of food for the rest of my life, that would be it. . .or greek. There are absolutly no Indian resturants here. I really need some good/easy recipes if anyone has any.
