One thing that goes very nicely with sauerkraut is tempeh
just slice it and cook it with a bit of oil and a little soy sauce or salt
until it is nicely browned and serve with sauerkraut
..... the person that served this to me insisted
it goes really well with dark beer
not really sure about that
