Happy birthday Spicy! Here's a recipe for more food:
Spicy Jack Cheese Crisps You can make these cheese crisps plain or as spicy as you like. Prepare the dough (for about 100 crisps!) at least 8 hours ahead of when you want to bake your yummy cheese crisps. INGREDIENTS: * 1/2 cup butter, softened * 2 blocks Monterey Jack cheese (8-ounce each), with or without peppers (as desired), shredded * 2 cups flour * Cayenne Pepper, sprinkle to taste as desired (optional) * 96 - 99 pecan halves (optional) PREPARATION: NOTES: My recipe requires that you chill the dough a minimum of 8 hours before baking. Prep time is approximately 15 minutes to mix the dough for chilling. Baking time is 8 to 10 minutes per batch - grand total of about 30 minutes. * Beat softened butter and Monterey Jack cheese at medium speed with an electric mixer until blended * Slowly add flour, beating continuously until well blended. * Divide dough into 3 equal portions; shape each portion into a 6-inch log. * Cover and chill at least 8 hours. * Once chilled, cut each log into 32-33 slices approx 1/8 inch thick * Place slices on ungreased baking sheets. * OPTIONAL - Sprinkly each wafer lightly with Cayenne Pepper * OPTIONAL - Gently press 1 pecan half into center of each wafer. * Bake, in batches, at 350 degrees for 8 to 10 minutes. * Remove crisps to wire racks to cool. Store in an airtight container. * Preperation: Chill: 8 hours; Bake: 10 minutes per batch. |
