your recipe sounds good, fodder! i am going to try that!
here´s another one: - minced beef - pasta (the "butterfly" kind is the best for this recipe) - can of tomato puree (is that english?) (small can for 1-2 people, large can for 2 or more) - fresh spinach leafs - green pesto (basil pesto) - oregano - emmenthaler cheese - grated parmesan cheese - feta - cherry tomatoes preheat oven for 10 minutes at 220c. now put water on until it boils. then put pasta in and cook it al dente. chop emmenthaler and feta. now cook the minced beef, don´t use any butter or oil or anything, just keep stirring. when the beef is done, put the tomato puree in the pan with the minced beef. add water and stir until the the tomato puree looks like a sauce. add a tablespoon of green pesto. put emmenthaler cheese in the pan with the sauce, stir until it melts. keep stirring, the cheese will make the sauce very sticky, try to avoid a crust in the pan. now put a layer of pasta in an oven dish. put the fresh spinach leafs on top of that layer, then a layer of sauce, then more pasta and the rest of the sauce on top. sprinkle little pieces of feta and some oregano on top of the sauce. put the dish in the oven until the top layer of the sauce has become slightly crusty, probably 5 minutes. serve with a nice rose wine. serve cherry tomatoes and parmesan cheese on the side. fresh pineapple is a very good dessert for this one. enjoy! ![]() |

Ok, I have taken this to 3 parties recently and it is gone so fast, a huge hit!
I know you can make the sauce somehow, but it's so much easier just to buy a bottle of it if you can find it. So go to the store and pick up a bottle of roasted rasberry chipotle sauce. YUM Pick up a brick of cream cheese and some wheat thins. You HAVE to use wheat thins! Put brick of cream cheese on a plate and pour the chipotle sauce on top of it, don't be shy. Serve with WHEAT THINS ONLY! It is like a flavor explosion inside your mouth...amazing! ![]()

OK, so I am cooking for my girlfriend tonight and she wanted something Chinese/Asian so I am doing pork as follows:
Get some Pork belly from your butcher (ask him to leave the fat on so you get crackling - yum). Marinate for 8 hrs at least with: five spice powder, crushed up szechaun pepper, crushed sea salt (the best you can afford), and crushed/ground ordinary white and black pepper. Rub plenty of salt and a bit of cooking oil on to the fat side though (helps the crackle). The quantities are not really important - more of a common sense thing (This is a DRY marinade - like a 'rub' really) Chill while marinading in the dry ingredients. Preheat oven to v.hot (220-240 C) and place on a wire rack over a baking tray or other tray (to catch the juices). You might line the tray with foil. After first 15-20 mins turn the heat down to 190. Cook until done (I have just closed the oven door on mine but I guess prob an hour+ depending on the size of your piece/s of pork) Serving this carved into strips with margaritas (don't ask why, I just AM) - plain boiled/steamed rice, plenty nice green bok choi (steamed) and chinese gravy which I shall make with: 1 x Veg stock cube, soy sauce, a small amount sesame oil (quite powerful), bit of dry sherry or chinese cooking wine, salt, pepper, five spice powder, touch of crushed garlic, touch of grated fresh ginger AND the juices from the pan (after skimming off any fat) (edit: Oh and a little cornflour mixed with cold water if you like to thicken your gravy a smidgeon) Sorry this is more of a method than a recipe but I am not much of a one for exact measurements. I'll let you know how it goes down in an few hours! ![]() PS: Zen - that Raspberry Chipotle sounds great - must collect abottle on my next US trip!

Bruschette (is that how you spell it? it's pronounced "brush-etta.")
Ingredients: 1 loaf Peasant or French bread 1 bottle olive oil Feta cheese Parmesan cheese Mozzarella cheese Chives (green onions) Tomatoes Mushrooms if you want One or all of: Basil Oregano Parsley Heat oven to 350F. Slice bread, chop veggies, seed tomatoes (cut tomato in half and hold under running water while squeezing gently. This will get rid of seeds and juice and help keep your bruschette from getting soggy). Grate cheese if needed. Use pastry brush to completely cover bread in olive oil. Sprinkle spices on top. Add tomatoes, chives, mushrooms, feta parmesan, mozzarella, in that order. Bake until cheese is melted and bread is toasted, about 10 minutes. Serve with your choice of pasta (fettuccini is best).

Kat's famous seafood alfredo.
This one knocks em dead everytime..especially if your guests are allergic to shellfish. I usually make a large quantity because it is something that I make for a dinner party of at least 4 or more. Adjust the ingrediants as you see fit. 3 bottles Alfredo sauce. (you can make your own, I never do.) 1 lb of shrimp (uncooked, shelled) 1 lb of salmon (cut into 1inch or 2 inch chunks) 1 can of fancy crab meat (next to the canned tuna fish) lemon juice (add to taste) fresh dill 1 lb pasta shells (you can use any kind of pasta, i use the shells to keep with the seafood theme ![]() These are the basic ingredents that I use, you can use mussles, scallops, clams, anything really. This recipe just kind of grew to what it is now. ------------------------------------------------------------------------------------ pour all the alfredo sauce in a sauce pan and turn on medium heat, keep stirring it so you don't skin the sauce. Add the fresh dill to taste. Add lemon juice to taste. You can stir in the crab meat now. Get the pasta going, make sure it is done right before you throw in the salmon chunks. Turn the heat up a little now. Cook the salmon IN the sauce, this only takes a minute or two. Last, throw in the shrimp, also cook these IN the sauce. This takes about a minute. Wallah, you are done, pour this yummy goodness on top of pasta and enjoy. You can add a little white wine or veggies, anything really. This combo is a crowd pleaser though!

I never heard of roasted raspberries. Is that like roast beef? j/k, but seriously, can someone give me a link or a brand name for it? I did something similar for work once 1 cake cream cheese 1 bottle chili sauce shrimps, lots of shrimps Put the cake of cream cheese on a plate, you can mash it down into a nice pancake covering the whole plate or you can leave it as a brick. Cover w/chili sauce, then sprinkle shrimps on top. Serve w/Ritz crackers. I'm going to try your shrimp this week, fodder. Salmon: Cover raw salmon fillet w/Miracle whip, like you are frosting a cake. Sprinkle on Morton's Natural Seasonings, Mrs Dash, or any other salt/sodium-free seasoning blend, then bake according to salmon package directions. Chicken Marinade: Pineapple juice low sodium soy sauce VERY SMALL AMOUNT of sesame oil boneless skinless chicken breasts Large Ziploc bag Let sit overnight, then bake or grill or saute chicken. Yummmm. I like to grill this, then cut it into strips & throw it in w/a bag of Oriental veggies. Edited to say: I am sooooo trying Kat's seafood thingy!!! Do you think I could replace the dill w/garlic?

roasted rasberry chipotle sauce
![]() this sounds good too! Crispy Raspberry Duck 1 5 to 6 lb. Duck* 1 orange, quartered 1 bottle Roasted Raspberry Chipotle Sauce Preheat oven to 350o F. Rinse duck inside and out. Dry cavity and place 1/4 cup Bronco Bob’s Roasted Raspberry Chipotle Sauce and orange quarters in cavity. Place on rack in roasting pan, breast side up in preheated oven. Roast for approximately 2 ˝ to 3 hours, basting every 30 minutes with Roasted Raspberry Chipotle Sauce. Let rest 10 minutes and carve. Garnish with a few fresh raspberries and pass extra warmed sauce when serving. Serves 4 to 6 *A Roasting Chicken may be used instead of Duck.

Does it work with American butter?
![]() The bestest pizza ever: a pain in the arse, but delicious. First, make bread dough. If you don't know how or just dont feel like it, get a frozen white bread dough. Shape dough to fit pan. Bake at 350 F for about 10 minutes or so. Add Prego Pasta Bake sauce - DO NOT add water to the sauce. Add cheese and whatever pizza toppings you like. Bake at 350-400 F until crust is golden brown and cheese is melted. remove from over, let cool, cut, enjoy. If you stack it like I do, then you might want to use a fork.

I am making Fodder's shrimp thingie tonight. I just shelled and de-veined 2 pounds of shrimp. I just invited my bro and his biatch to come over and have dinner. I didn't even think until after I was done that, DAMN! That's alot of shrimp......
