What are we having for dinner? This is the thread where we help each other eat
Okay, so I need to know how to make Szechuan sauce.
Anybody got a recipe that I can't find on the net already?

Here are a couple:
I don't remember where this came from, but it's good. 1 1/2 T chili bean paste 2 t fermented black beans a few whole Szechuan red chillies 1/2 c veggie stock 1 t sugar 1 t light soy sauce 2 t cornstarch mixed with 1 T cold water 1/4 t ground Szechuan peppercorns (best not to substitute) Pour over whatever you've cooked and bring to a boil, stirring, until it turns clear. OR from my beloved Madhur Jaffrey cookbook, not sure if it's technically Szechuan, but it's close. 2 t cornstarch (mix in water as above) 1/2 c stock 1 t chili paste with soybean (aka with soybean and garlic) 2 T light soy sauce 1 T sesame oil 1/2 t salt 1/2 t sugar use as above |
