I yam

I gotta question.

Regular Candied Yams,

1/4 c butter
4 Fresh yams
1/2 bag
-miniature marshmallows (opt.)
1/2 c Orange juice OR
1 -orange,
-sliced
1/4 c Brown sugar

Drain yams and discard liquid. Arrange in baking dish. Pour orange juice over yams. Sprinkle liberally with brown sugar. Dot with butter. Sprinkle with marshmallows, if desired. Place orange slices on top.

Bake for 30 minutes at 350 degrees or in any oven temperature (i.e., right along with the turkey) until marshmallows melt and liquid is bubbly. Serves 6.

Adrienne Barbeau's Yams

Serving Size : 18

7 pounds Yams boil tender, cool -- peel
1/2 cup Butter divided use
1 pinch Salt
1/2 teaspoon Pepper
1/3 cup Honey
1/2 teaspoon Nutmeg
1/3 teaspoon Cinnamon
3 Pippin or Granny Smith apples -- peel, core, thin
1/4 cup Butter cut squares

Mash yams with 1/4 c butter -- salt and pepper.
Melt 1/4 cup butter with nutmeg and honey. Pour into bottom of
casserole and layer with apples. Add mashed yams and top with cinnamon and 1/4 cup butter squares. Bake at 350~ for 45 minutes until bubbling.

Of course, if I do Adrienne Barbeau's Yams, I'll have to divide the recipe. Significantly.

I tried the yam/apple combo - not so great...
People who like yams... gotta have the classic yam recipe.
People who don't like yams - there's just nothing you can do to them to make them acceptable.

(sigh) I'd make yam tempura, really I would, but it would be a little strange with turkey.

Do that but add these spices, more brown sugar & chopped pecans.




1 pinch Salt
1/2 teaspoon Pepper
1/3 cup Honey
1/2 teaspoon Nutmeg
1/3 teaspoon Cinnamon

I like yams, but for those who don't:

1 stick butter

3/4 cup brown sugar

2 tsp. allspice

1 tsp. seasoned salt

2 cups chopped onion

Fry onion in butter until translucent. Stir in brown sugar and cook over low heat until mixture bubbles. Pour over yams in glass baking dish, sprinkle allspice and seasoned salt over all. Bake at 350F for 90 minutes. Throw the whole goddamn thing away and go to a sports bar and watch the ballgame and eat chicken wings, since you don't like yams anyway, right?

Don't tempt me; I have one of these five minutes away, and the wings are unbelievable.

Bake them like you would a baked potato--scrub, poke & 400 degree oven for 30-45-60 minutes, depending on the size.

Serve like you would a baked potato, with cinnamon, butter & brown sugar.

No recipes, no guesswork.




(ps this is awesome leftover for breakfast)

I like the corn syrup and vanilla in this one. I have some nice baniya.

4 pounds yams (or sweet potatoes), peeled and cut to large bite-sized pieces
2 cups orange juice
3 cups light corn syrup
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 cup vanilla extract
2 teaspoons lemon zest
2 tablespoons flour
1 1/2 cups light brown sugar, packed
1 1/2 cups granulated sugar


Preheat oven to 350 degrees F.
Boil yams until slightly underdone, to avoid breaking. Strain, cool and set aside.

In a large container whisk together orange juice, corn syrup, cinnamon, nutmeg, vanilla and zest. In another bowl, whisk flour and both sugars together.

Put cooled yams in a deep baking dish, add dry ingredients and stir to coat. Pour liquid over yams and bake for 20 to 25 minutes.
