i've tried both and i found snails conceptually more difficult. in the battle of mind over matter, snails were much harder to defeat.
my answer is neither, but if i absolutely had to choose i'd choose oysters. |
I am a veggie head and so don't eat either, but if I had to choose, I would choose oysters if I could have them this way, because it is so purdy.

Both! Snails in their shells with garlic butter and oysters with caviar, creme fraiche and vodka or in a shot glass with......dammit I can't remember but they were good.

i basically have a policy about meat that says i can't eat anything that looks like it looked like when it was alive. no fish with the heads on, no snails still in the shells, no lobster. it's not a moral thing. it's a grossout thing. |

Oysters and snails are pretty much undifferentiated slime. For my money, oysters tend to go better with other sadistic foods I am fond of.
Oyster-wasabi shots with aquavit Serves 6 Warning: Not for the faint-of-heart! 3 ounces aquavit 6 small fresh oysters such as Olympias, freshly shucked (or use pre-shucked Chesapeake or Pacific oysters) 3/4 teaspoon prepared wasabi paste, or to taste 1 1/2 teaspoons domestic or imported black caviar, or salmon roe caviar 3/4 teaspoon minced fresh cilantro 1 teaspoon orange zest Place the aquavit in the freezer at least 2 hours before you plan to serve. Chill 6 shot glasses, preferably the straight-sided variety. If using the very large, shucked Pacific oysters, cut them into halves or quarters. Working quickly, place 1 tablespoon of aquavit into each of the chilled glasses and top with 1/8 teaspoon of wasabi paste, or to taste. Top with an oyster, and top each oyster with 1/4 teaspoon caviar, and a tiny pinch of cilantro and orange zest. Serve immediately. If it is possible to do so elegantly, drink the whole thing in one gulp. |
